Veal with peppers and wine

Ingredients

1 kg veal rump cut in 12 pieces
2 green peppers chopped
1 onion
1 Carrot
150 ml olive oil
250 ml red wine we suggest Agiorgitiko wine
Sea salt
Freshly grated peppers
οregano
Thyme
For the decoration
20 gr. rosemary fresh
yogurt

Taste that lifts you off

 

Cooking with wine always gives unique taste, aroma and special tones. Of course, in cooking we use wine that blends well with the main ingredient of the dish. If its fish or white meat we use white wine accordingly, if its veal or game red wine its the main choice. We don’t use wine that we already opened and kept it in the fridge  for days or retsina (type of wine). Lately its a trend that the wine we choose to accompany our meal it will be the one that we are going to use in the kitchen.

 

Veal with peppers and red wine

Steps

In a pot we add 100 ml olive oil to "get hot". We sprinkle salt and pepper at the pieces of meat and saute them in the olive oil, turning it on all sides. Estimate 20 seconds on every side before we turn it with the grabber so it doesn't loose its fluids.

In the multimixer we mush the carrot with the onion and add it in the pot.

90 min.

We turn the heat down at half, and add 1 glass of warm water, half of the wine and let it simmer for 90 min, and check its fluids. If its needed we add a little bit of warm water.

In a pan we add the rest of the olive oil and let it get hot and saute the peppers.

When the veal softens we add peppers in the pot, the rest of the wine, oregano, thyme and rosemary while we stir constantly with a wooden ladle.

We turn the temperature up a little and when it boils 2-3 times, take it off the heat.

We serve it with yogurt and finish it with fresh rosemary.

Little secrets :

i) If we want we make potato mush with or without vegetables.

ii) Fried potatoes and pasta blend with it magnificently.
