Ingredients

INGREDIENTS FOR 12 SOUVLAKIA
FOR THE MARINADE
1 ½ cup of fine olive oil
1 garlic clove finely chopped
juice of 1 juicy lemon
1 tsp. Thyme
1 tsp. οregano
2 tbsp. soft mustard
juice from a juicy lemon
salt
freshly ground peppers
FOR THE SOUVLAKIA
10 mushrooms sliced but only the top part
2 zucchini sliced
2 green peppers or orange peppers diced into large cubes
2 red peppers diced into large cubes
1 dry onion diced into large cubes
FOR THE SAUCE
soft mustard
fine olive oil
Lemon Juice
οregano
salt
freshly ground peppers

Vegetable Souvlakia (kebab)

That excite people …

Souvlakia are very popular with children, so it is a nice way to make them love vegetables, which is sometimes difficult. When they are convinced to try them, however, it is certain that they will want them. We can use the vegetables we love and in the middle we can decorate it with halloumi cheese or kefalograviera cheese. Another convincing and delicious solution for children is to serve them with freshly baked crispy Arabic pies.

If some children do not like the eggplant, you can put a potato that you can pre-cook to make it softer or a tomato or even a carrot. It goes without saying that at every friendly gathering, vegetable souvlakia are original and welcome in any buffet and can accompany grilled meat and generally fiery flavors.

We wash and dry the vegetables and after we cut them we skewer them on sticks in order, the mushrooms first to keep the others in place, the zucchini, the peppers, the onion and lastly the eggplants.

We mix all the marinade ingredients in a bowl and beat them with a fork until the mixture is homogeneous.

We put them in an elongated bowl, it is more convenient and pour the marinade over them.

We leave them for 90 minutes and we turn them from time to time.

15 - 20 minutes

We bake them in a preheated oven on the oven grill or in a pan at 180° C for 15-20 minutes, turning them regularly.

We put the sauce ingredients in a bowl in the amount we want and beat them with a fork until the ingredients are homogenous.

We pour over the sauce as soon as we take the souvlakia out of the oven and serve on a plate.

If we want, we decorate the plate with fresh mint or other aromatic herbs.
