Ingredients

10 eggs fresh
10 tbsp walnuts cut in big pieces
10 tbsp orange rusk grinned or breadcrumbs
10 tbsp granulated sugar or brown
3 Vanilla stick
1 tsp baking powder
2 tsp cinnamon powder
1 tsp carnation grated
zest from 2 dewaxed oranges
1 shot orange Liqueur or cognac
FOR THE SYRUP
2 water glasses sugar
2 glasses of water
1 Cinnamon stick
FOR THE SPRINKLING
10 walnuts cut in big pieces

Walnut pie

A hundred years old Cretan recipe

 

Magnificent taste with orange aroma that creates gustatory memories, now that walnuts are at their best, fresh with rich taste and vivid color…. Walnut pie especially on the mountains of Crete but also at the orange villages at the foothills of the White mountains, has a custom character since it is a traditional treat.

The fresher the walnuts are the better the walnut pie is.

Next to the turbulent sea of Palaioxora, Helen a friend of my friend Georgia Perraki, wanting to thank us…. made the walnut pie and so managed to amaze us with her skills in pastry making because she is an “ace” in cooking….

A hundred years old Cretan recipe

First we prepare the syrup

In a pot we add the water, sugar, cinnamon stick and boil for 20 minutes until the syrup "thickens". We let it cool down.

In a clean dry mixer bowl we add egg whites and whisk them strong until they become meringue.

We slowly add the sugar and while whisking it we add the egg yolks, walnuts, rusk, baking powder, orange zest, clove and vanillas.

We butter the pan and pour the walnut pie inside.

30-40 min,.

We bake in a preheated oven at 200° C for 30-40 min.

We test if its baked by dipping the knife in the pie. If it comes out dry the walnut pie is ready.

While the walnut pie is warm we pour over it the cold syrup.

1 hour

After an hour we cut it in pieces and serve while sprinkling it with walnuts cut in big pieces.
