1 kilo zucchini moderate size without seeds
1 cup Kefalograviera cheese chopped, gruyere and feta cheese
self raising flour or crumbs
4 eggs fresh
salt
Freshly grated peppers
chopped mint or oregano

Father Dositheos is known for his knowledge in cooking and confectionery. He has written a book based on the life at the Monastery.

I visited him in the Monastery where we had the opportunity to try some of his dishes he prepared for the Monastery banquet.

His zucchini fritters contained tasty types of cheeses of Evritania. Moreover, the zucchinis were from their garden.

A difficult snake road keeps passengers away from Karpenisi. Nonetheless, it’s a pleasure to have some sophisticated people who want to worship the miraculous icon of the Holy Mother.τοπίο

Indeed the nature up there is dreamlike. The Monastery is like the “watchful guardian” of the magnificent lake of the Kremasta and Megdova dam.

The Father told us that when he wants to cook the fritters for fasting, he replaces cheeses with aromatic greens and herbs of Evritania .

We grate the zucchini and add some salt.

We squeeze the grated zucchini well and we put it in a large bowl.

We add the cheeses, mint, pepper, eggs, crumbs and mix them.

If it is necessary we may add a bit of flour to make the dough soft.

We knead the zucchini fritters and press them softly.

We cover them in flour to fry better.

In a large and deep pan, add olive oil and heat it up.

We put the zucchini fritters in the pan with the spoon and when they get a golden colour on the one side, we flip them on the other side.

We put an absorbent paper on a platter and leave the zucchini fritters on it for the absorbing of excess oil.

We serve them all around the platter and in the middle we add a cream of yogurt and perhaps some boiled zucchinis as father Dositheos would prefer.
